This past weekend I hosted a vision board brunch at my apartment and invited some amazing ladies to brunch and make their own personal vision boards.
We had a wonderful time eating and putting our aspirations onto paper. I made a few yummy dishes and I figured I'd post recipes since the ladies enjoyed the dishes so much. The recipes are for Cinnamon Sugar donut muffins , Spinach and Ham Quiche, Sausage Pancake bites and orange sorbet mimosa .
Ingredients
1/2 cup white Sugar
1/4 cup melted margarine
1 tsp ground nutmeg
1/2 cup milk
1 tsp baking powder
1 cup all-purpose flour
Topping:
1/4 cup melted margarine
1/2 cup white sugar
1 tsp ground cinnamon
Directions:
1. Preheat oven to 375 degrees F (190 degrees C). Grease 24 mini-muffin pan
2. Mix Combine all ingredient is a large bowl, Fill the prepared mini muffin cups about half full.
3. Bake n oven until the tops are slightly golden, about 15-20 minutes
4.While Muffins are baking, place 1/4 melted margarine into one bowl. In a separate bowl, mix 1/2 cup of sugar and 1tsp cinnamon. When muffins are finished remove from muffin pan and dip each muffin in melted margarine and roll in the cinnamon mixture. Let cool and serve.
Ingredients:
1 cup Pancake Mix8 cooked breakfast sausage
Directions:
1. Preheat oven to 375 degrees F (190 degrees C). Grease 24 mini muffin pan.
2. Prepare pancake mix according to box instructions.
3. Fill muffin cups half way with pancake batter. Place 1/3 cooked sausage into each muffin cup.
4. Bake until slightly golden brown. About 10-12 min
5. Remove from oven, allow to cool slightly and serve with syrup
Ingredients
1 ham Steak, cubed
1/2 lb shredded mozzarella
1/2 lb shredded parmesan
4 tbs butter, melted
8 eggs, beaten
1/4 cup chopped chives
1/2 cup baby spinach leaves
1/4 cup chopped sweet red pepper
1 cup all- purpose flour
2 1/1 cups milk
2 tsp Salt
1 tsp red pepper flakes
1/4 cup jalapeño, chopped (optional)
1 tsp black pepper
Directions:
1. Preheat oven to 350 degrees (175 degrees C). Grease a 12 muffin pan.
2. Mix eggs, butter, milk, flour and salt until smooth. To the egg mixture add the rest of the ingredients and then fill muffin cups, fill to the top.
3. Bake in preheated oven for about 50 minutes or until the quiches are set. Serve hot or cold.
Makes about 15 cupcake sized quiche. Recipe can be halved and made in a 9 inch pie.
Add 1 Scoop Orange sorbet into champagne flutes, slowly fill rest of glass with Champagne. Enjoy. |

DeleteAll that food looks so delicious! I don't eat meat but the quiche would be amazing if it didn't have the ham in it!

Yea the ham is totally optional. You could do all veggies or even tofu. Quiches are great for customization.
