It's hard to believe that the summer is almost over *cue the violins*. But just because the summer is ending doesn't mean we still can't enjoy all of our favorite summer goodies. Peaches are definitely one of my favorite summer treats and to be able to make a tasty dessert with them, is just icing on the cake, (or should I say, crumble on the peaches). TOPPING:
- 1/2 cup rolled oats
- 1/3 cup packed brown sugar
- 1/4 cup sliced almonds
- 3 tablespoons butter, softened
- 1 teaspoon cinnamon
- 1/4 teaspoon salt
- 6 cups sliced peaches (about 4 to 6 peaches)
- 1/4 cup packed brown sugar
- 2 tablespoons cornstarch
- 1 teaspoon almond extract
- 1/8 teaspoon nutmeg
- 1 tablespoon burbon (I added this to the original recipe and it was just an amazing addition)
- Vanilla ice cream, for serving, optional
DIRECTIONS
For the topping: Preheat the oven to 325 degrees F.
In a small bowl, combine the oats, sugar, almonds, butter, cinnamon and salt and stir with a fork until the mixture resembles coarse crumbs; set aside.
For the filling: In a medium bowl, stir together the peaches, sugar, cornstarch, almond extract and nutmeg and transfer to an 8- or 9-inch shallow baking dish. Crumble the topping over the peach mixture. Bake until the filling is hot and bubbly and the topping is golden brown, 40 to 50 minutes.
